Cabbage Soup Recipe

Preparation:
Use a large pot over medium-high heat, add 2 tablespoons olive oil. When oil is hot, add onion, celery, carrots with half the salt and pepper. Stir until vegetables are hot all the way, add the garlic and reduce heat. Let the mixture cook for about 2-3 minutes, stirring frequently, do not let anything burn or cause a bitter taste in the soup. Now pour the chicken broth, add the cabbage and tomatoes. Stir to allow flavors to blend, then cover and let heat until it has a gentle boil. Cook 10 minutes, then taste and add the remaining salt and pepper, if necessary. Let it cook for about 8 to 10 minutes. When serving, top with some chopped onions or fresh cilantro, finely chopped. Serve with assorted crackers or breads multiple.

Options to add to this basic soup recipe are: 1/2 teaspoon dried oregano, 1/2 teaspoon ground cumin, spring onion, fresh green beans, 1 large potato, cut into small cubes, 1 cup corn, 1 medium zucchini, cut into cubes.

Adding a protein soup mix can enrich the food: Meats to include could be cooked chicken [1-2] Cups, diced small wheat pasta, whole [1/2-1 Cup], ground beef cooked [93/7]. Tofu is an excellent ingredient for people with cabbage soup as a meal in the diet.

Remember if you are using this soup as a diet tool, make sure you have some fat in it as some vitamins are fat soluble, which means they need some fat for the body to absorb nutrients. Add the tablespoon of olive oil over the soup and stir. Even when on a diet, you want to capture all the nutrients of the foods you are eating.
