Tips for Making A Swahili Dish


Cardamom pods

Preparing "pilau"

Prepare the garlic and ginger by crushing to the extent that found satisfactory. Boil the beef in the pot, cook until all the water has dried. Chop onion and add to the pot to cook with butter and cook until it became golden. Add the garlic and ginger and cook for a few minutes and then add the other spices, ie cardamom pods, cinnamon and cumin seeds.

To the mixture, add the cooked meat and tomato paste and cook for 10-15 minutes. Add the rice and a pinch of salt and stir gently, then add the water (as in the ratio of 1:2 ie 1 cup rice to two cups of water). Cover the pot and boil until the water has evaporated and the rice is done. The resulting look should be brown with a sweet fragrance. Serve hot with any seasoning or your favorite stew.
