Preparation
Cook ginger, peanut oil for 3-4 minutes over medium heat. Mix 1 cup broth and cornstarch and transfer to the pot. Add the tofu, sugar, bamboo shoots, broth, mushrooms, soy sauce, vinegar, red pepper and boil until a thick consistency. Add the remaining ingredients except spinach. Add the spinach after 10 minutes and keep the soup on the stove for about 1-2 minutes.
